2 1/2 lbs Yukon Gold potatoes, peeled and cut into large, equal chunks
1/2 cup light cream
1/2–3/4 cup whole milk
6 Tbsp butter
3 Tbsp Stonewall Kitchen Maple Bacon Onion Jam
1 Tbsp chopped chives
1 tsp salt
Pepper, to taste
Optional: 3/4 cup shredded cheddar for cheesy mashed potatoes
Directions
Step 1
Place potatoes in a large pot of cold, well-salted water. Bring to a boil, then reduce heat and simmer 15–20 minutes or until fork-tender.
Step 2
Meanwhile, gently heat the cream, milk, and butter in a small saucepan over low heat until melted. Stir in the Maple Bacon Onion Jam until combined. Add chives and salt.
Step 3
Drain potatoes. Return them to the warm pot and stir over low heat briefly to remove excess moisture. Turn heat off.
Step 4
Mash potatoes, then pour in the warm cream mixture.
Step 5
Season with salt and pepper to taste.

Directions
Step 1
Cook diced bacon in a skillet until crisp. Remove and set aside.

Drain bacon grease, leaving about 2 Tbsp in the pan.

Return skillet to medium-low heat and sauté garlic for 1 minute.
