Ingredients

  • 2 1/2 lbs Yukon Gold potatoes, peeled and cut into large, equal chunks

  • 1/2 cup light cream

  • 1/2–3/4 cup whole milk

  • 6 Tbsp butter

  • 3 Tbsp Stonewall Kitchen Maple Bacon Onion Jam

  • 1 Tbsp chopped chives

  • 1 tsp salt

  • Pepper, to taste

  • Optional: 3/4 cup shredded cheddar for cheesy mashed potatoes

Directions

Step 1

Place potatoes in a large pot of cold, well-salted water. Bring to a boil, then reduce heat and simmer 15–20 minutes or until fork-tender.

Step 2

Meanwhile, gently heat the cream, milk, and butter in a small saucepan over low heat until melted. Stir in the Maple Bacon Onion Jam until combined. Add chives and salt.

Step 3

Drain potatoes. Return them to the warm pot and stir over low heat briefly to remove excess moisture. Turn heat off.

Step 4

Mash potatoes, then pour in the warm cream mixture.

Step 5

Season with salt and pepper to taste.

Step 6

Serve immediately — or fold in cheddar cheese for a rich, creamy variation.
